I don't think is very easy to make it. I always buy rice flower pancakes, moist them in a warm damp cloth and roll it around my filling.

You don't want to bother with making these!

Buy them frozen in different size squares in chinese supermarket. I've seen them in freezer section of ethnic shops. Defrost at room temperature.

Peel one square off pack at a time when you are using & keep rest covered as they will dry out. Lay a square on table in front of you with corner pointing towards you. Put filling in a small heap in middle of square. Use corner closest you to cover the filling, roll tightly shaping the roll as you go, fold in both left & right sides. Use beaten egg to seal the last point. Deep fry in hot oil.

Vietnamese use rice flour rolls which I've seen in our supermarkets (asda's/tesco's).

They are round hard translucent discs which you soak in warm water for a couple of mins til they soften. you dab excess water with kitchen paper and you put fillings like, cooked prawns, shredded lettuce and coriander in and roll tightly. Use a sauce to dip roll in before eating. These are sometimes called summer rolls.

I've used filo pastry from supermarkets for spring rolls. Just cut into long rectangles. Put a long cylinder of filling at one short end of rectangle, start rolling up tightly, fold in the long edges and keep rolling til pastry gone. Use beaten egg to seal open edges. Fry in hot oil.

Do it once and you'll never do it again.

Just buy wonton wrappers in the refrigerated produce section of the grocery store.

If you want cold spring rolls (like salad in a roll), buy the rice paper wrappers in oriental or gourmet markets, on the shelf near oriental foods. Soak briefly in water to use.
