Chicken~N~Rice
4 cups cooked chicken, diced
3 cups chicken broth
8 oz. sour cream
2 cups Minute Rice
2 cans 'cream of soup' (chicken, celery, mushroom, or a combo)
1 medium, sautéed onion
2 tubes crushed Ritz crackers
1 stick melted butter
Cook the chicken, when cooled de-bone and dice. Mix with the broth, rice, soups and sour cream. Add sautéed onion, if using. Mix well. Place in a greased 9x13 casserole. Bake at 350 degrees for 20 minutes. Meanwhile, melt the butter and add to the crushed crackers. Mix. After 20 minutes, sprinkle over the partially cooked casserole. Bake an additional 15 minutes, until crackers are browned and casserole is bubbly.

chicken breast recipe starts with two or three chicken breasts, a can of cream of mushroom soup, a can of mushrooms (drained), Instant rice, and cheese. You will also need a small amount of milk; a couple teaspoons of oil, garlic powder, onion powder a skillet, saucepan, and baking dish. I start by cutting the chicken up into inch size pieces and placing it in the skillet with the oil and frying it until it turns white or slightly brown. While the chicken cooks, cook the rice according to package directions for 6-8 servings. When rice is finished add the mushrooms and mushroom soup, garlic and onion powder to taste, and heat to boiling. Add just enough milk to thin mixture to a slightly soupy consistency. Place half of the rice mixture into the baking dish, layer with the chicken then the cheese and the rest of the rice mixture on top. Place dish in oven at 350 degrees until hot and bubbly.

Boil Chicken until done - cut in little pieces
In skillet melt 1 - 2 TBLS of butter - slice an onion, mushrooms, and a green bell pepper - you don't have to use all of these.
Saute' until done
add soup and a little milk - and maybe a little broth until it is a creamy texture- I like to melt some Velveeta in it as well
Make your rice
add it all together and put in a baking dish - heat at 350 until bubbly top with cheese return to oven to melt - serve -
The best chicken and rice.
Sometimes I will put broccoli in it too.

For something different, oven bake your favorite white fish. Rainbow trout is great.
Pour the cream of mushroom sauce in a sauce pan, add half of can of milk and half of can water. Once that begins to boil, add chopped pieces of shrimp and green onions. Once the onions become soft, pour it over your fish. Eat with white rice and enjoy.
For a kick, add a dash of white wine to the oven safe pan mid way through the cooking of the fish!!
