APPLE CHEESE TOPPING
Use this spread on bagels, toast, or crackers.
8 oz pkg of cream cheese at room temperature
1 cup grated cheddar cheese
2 tablespoons lemon juice
1 medium-size peeled cored Granny Smith apple
1/2 teaspoon black pepper
1 teaspoon dried thyme, basil or oregano
In a medium bowl, combine the cream cheese, cheddar cheese and lemon juice. Grate apple directly into cheese mixture. Sprinkle with black pepper and dried herb. Cover bowl and chill approximately 1 hour.
SNICKER APPLE SALAD
6 full sized SNICKER bars
6 to 8 medium granny smith apples
1 lb. Cool Whip
Freeze Sniker bars overnight and crush. Core and peel apples. Mix with Cool Whip and crushed candy about 1/2 hour before serving.
CROCKPOT APPLE BETTY
3 lbs. cooking apples
10 slices of bread, cubed (about 4 cups)
1/2 tsp. cinnamon
1/4 tsp. nutmeg
1/8 tsp. salt
3/4 cup brown sugar
1/2 cup butter or margarine, melted
Wash apples, peel, core, cut into eighths; place in bottom on crock. Combine bread cubes, cinnamon, nutmeg, salt, sugar, butter; toss together. Place on top of apples in crock. Cover. Place crock into outer shell. Cook on LOW setting 2 to 4 hours.
FRIED APPLE PIES
(my favorite w/vanilla bean ice cream)
4 peeled, thinly sliced Granny Smith apples
1/2 c. water
1/2 stick butter
1/2 c. sugar
1/2 c. chopped pecans
1/2 c. raisins
1 tsp. ground cinnamon
Cook apples until done, cool to room temperature. Open a can of crescent rolls, unroll the triangles and let them warm some. With your hands, carefully stretch the rolls out a little. Lay one crescent on a plate, fill with the apple mixture (make sure its not too hot or too cold) and top with a matching crescent. Pinch the edges together. Heat some oil in a skillet, place pies in oil and fry. (Be careful, the crescents brown quickly.) Brown on both sides. Remove from skillet, put on a plate and sprinkle with powdered sugar.
TAFFY APPLE DIP
1 stick butter or margarine
1/2 c. light corn syrup
3/4 c. brown sugar
1 can Eagle Brand milk
Apple wedges - tart apples are best (like Granny Smith)
Optional: peanuts chopped to dip apples in after the caramel
Boil 1-2 minutes the butter, sugar and syrup. Add the 1 can Eagle Brand milk; mix well. Dip apples and enjoy. Serves well in a crockpot to keep warm continually without scorching. For parties may need to double or triple recipe. Easy to store in jars in refrigerator. Excellent on vanilla ice cream also.

Chop a couple large onions. Fry them until they're transparent but not brown. Put half of them in the bottom of your slow cooker/ crock pot.
Put 4 decent sized pork chops on top.
Put the other half of the onions on top.
Sprinkle on herbs. I like bay leaf and sage, but thyme is good, or just a decent packet of mixed herbs or a bouquet garni. Experiment and find what you like.
Slice up your apples - not too thick, not too thin, and layer them on top.
Pour over about 500 ml (about a pint) of good dry cider.
Cook on low for about 6-8 hours (or the time you're at work). If you don't have a slow cooker/ crock pot, use a covered casserole dish and cook for about 1 and a half to 2 hours at about 180°C (350°F) Gas 4, until chops are cooked properly.
Eat with crusty bread or new potatos and a green salad.
Serves about 4.
This works well with all types of "sharp" apples (e.g. cooking apples, granny smiths or Bramleys) - DO NOT use sweet desert type apples.
You can also make this with pheasant breasts. Brown them off, fry some smokey bacon with your onion and cook normally.

4 tart green apples
1/2 cup brown sugar
4 tablespoons butter
2 teaspoons ground cinnamon
Preheat oven to 350 degrees F
Scoop out the core from top of the apple, leaving a well. Do not cut all the way through. Stuff each apple with 2 tablespoons brown sugar and 1 tablespoon butter. Place in a shallow baking dish and sprinkle with cinnamon.
Bake in preheated oven for 15 minutes, until sugar begins to caramelize and apples are tender.

Granny Smith apples are quite crisp and tart and are usually used in cooking even though some people like to eat them fresh. Put them in a pie or just quarter them and sprinkle with a little cinnamon and sugar and bake them.

Crock pot applesauce
Cut your apples into cubes or chunks. You can leave the skin on if you make chunky applesauce or skin them if you don't like the skin or make the smooth applesauce.
Fill the crock pot with apples sprinkling in any of the below spices as you go.
Add any of these to your liking: Cinnamon, cloves, nutmeg
If you want it a bit more sweet than natural, add up to one cup sugar
Put crock pot on low for 6-8 hours. Don't add any water, the apples will make plenty of liquid on its own. When done mash with a potato masher for chunky applesauce or blend in a blender for smooth.

just peel core roughly chop and put them in a saucepan with tiny amount of water...nothingelse and cook... will only take seconds to come to the boil as there's no fluid hardly in the pan... then turn the heat real low and keep the saucepan lid on.. and let the apples cook until soft..the juice of the apple will soon ooze...
keep an eye on them don't go away and forget.. they'll be cooked very quickly.. they don't need sugar .. they will be naturally sweet ..
and I just have mine with either single pouring cream.. or yogurt..
healthy and delicious..
the cooked apples will keep well in the fridge...
