Oatmeal Lace Cookies
"My mom used to make these - they were our favorites! They are very crisp, and tend to shatter when you bite into them. Watch them carefully while baking since they do tend to burn quickly."
Original recipe yield:
2 dozen

INGREDIENTS
1/2 cup all-purpose flour
1/4 teaspoon baking powder
1/2 cup white sugar
1/2 cup rolled oats
2 tablespoons light corn syrup
1/3 cup melted butter
2 tablespoons cream
1 tablespoon vanilla extract
DIRECTIONS
Sift together flour, baking powder and sugar. Add oatmeal, light corn syrup, melted butter, cream and vanilla. Blend well.
Drop on ungreased cookie sheet 4 inches apart, using 1/4 teaspoon as a measure. Bake in 375 degree F (190 degrees C) oven for 5-7 minutes. Let stand a few seconds before removing from pan.

3 cups rolled oats
1 cup brown sugar
1 cup all-purpose flour or whole wheat flour
1/3 cup white sugar
1 teaspoon baking soda
1 teaspoon ground cinnamon
4oz applesauce
DIRECTIONS
In a bowl,mix dry ingredients: oats, sugar, baking soda, flour and cinnamon. Then add wet ingredients. Mix together.
Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets. Drop cookies by rounded tablespoons 2 inches apart onto the prepared cookie sheets. Bake for 8 to 10 minutes in the preheated oven. Cool on cookie sheets for 1 minute before removing to wire racks to cool completely.

You can also use egg replacers. Ener-G Egg is a powdered mix of starches and leaveners. You use 1/2 tbsp replacer and 2 tbsp of water per egg. Mix it before adding it to the batter. In her cookbook "Vegan With a Vengeance," Isa Chandra Moskowitz lists numerous egg replacers. And almost any good vegan cookbook will tell you how to replace eggs in baking. They'll also have some pretty good egg-free cookie recipes.

just use your favorite recipe and replace the eggs with 2Tbsp of any of the following
soy milk
soy creamer
silken tofu well blended until smooth,
I kept looking for specific recipes for a long time and then found the best/ easiest results with soy creamer.

You can go to a supermarket, Wal-mart(etc) and find some dry mix muffin mix, all you need to add to them is water or milk. But I usaly find them 4 @ stores like Wal-mart sometimes, but keep looking. Me and my Nana do them all the time.( When she visits) :-D
