i love pineapple pancakes,i just add a small can of crushed pineapple to my pancake mix.yum! you acn also use apple sauce.

FRUIT PANCAKES:
Serves 4
Provides 1 fruit serving per person
* Pancake mix (or your favorite "from scratch" pancake batter) for 4 servings
* 2 cups thawed frozen or fresh blueberries
* Chopped thawed frozen or fresh strawberries (make sure to drain frozen fruit), or banana pieces
1. Make the pancake batter according to package directions. Have 2 cups of the fruit, plain or mixed, ready.
2. Coat a skillet or griddle with pan spray and heat. When it's nice and hot, spoon the batter into the hot pan making whatever size cakes you want. Scatter the fruit on top, ¼ cup for smaller cakes and ½ cup for larger ones. Turn when brown and cook until done.
3. Lay on a hot plate, top with a little jam and a few more berries, and serve immediately.

I am assuming that you might have a berry allergy that you are trying to work around. So you can follow this recipe from scratch or you can add mashed bananas to bisquick pancakes. I have also simply added sliced bananas to the batter once it is on it's first side on the griddle. The banana browns and caramalizes a bit when you flip it over. Delicious!!!!
Banana Pancakes
INGREDIENTS
1 cup all-purpose flour
1 tablespoon white sugar
2 teaspoons baking powder
1/4 teaspoon salt
1 egg, beaten
1 cup milk
2 tablespoons vegetable oil
2 ripe bananas, mashed
DIRECTIONS
Combine flour, white sugar, baking powder and salt. In a separate bowl, mix together egg, milk, vegetable oil and bananas.
Stir flour mixture into banana mixture; batter will be slightly lumpy.
Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Cook until pancakes are golden brown on both sides; serve hot.
I hope you like them whichever way you choose to make them.

I believe you can use just about any fruit for pancakes. I have seen people use bananas, and strawberries. It's all a matter of tatse. When in doubt, experiment. There should be tons of books at the libary about different recips. Take care, and good luck.

I like apple/pecan pancakes. Just be sure you chop the apple into small enough pieces that it will cook. I'm a country boy and usually try whatever is ripe on the trees and vines outside. Even bacon/grape pancakes are pretty good, just sounds weird.

Aside from the obvious... my mom used to make me "corn fritters" but they were just pancake mix with 1/2 can of corn! I thought they were yummy when I was a kid, they are okay now, but I don't make them anymore. Kinda weird.

Any kind of berry pancakes are great, banana pancakes are fine. I once had pomegranate pancakes and they were quite interesting.

me like ones w/ banana in them too.
maybe apple would work?
pancakes are also good if you mix melty peanut butter in the batter. peanut butter is not a fruit tho. and you shouldn't do this if you are allergic to peanuts.
