i love your theme and don't get what the first person who answered this question's problem is.
the freaking theme is lucky in love---they aren't saying that that is the supreme way of life.

We are doing regular floral centerpieces for our 7/27/07 wedding, but each guest is getting a scratch off lottery ticket in a vellum envelope at their place setting, and we are doing "lucky bamboo" in individual tall glass vases as a favor. We love to gamble and actually got engaged in Atlantic City, so our ice sculpture will be a slot machine with our wedding date as the "jackpot." We aren't doing it as a theme, just a touch here and there for fun.

Head off to your craft stores NOW. Since Valentine's day is next week and St Patrick's day is in a month or so, anything to do with love OR luck will be found now and probably not later!
I would suggest getting maybe hearts, shamrock, and/or pots of gold (small ones about 1-2" tall on stakes) and have them put into the floral arrangements. You could also do all sorts of fun stuff with the wired garland that has hearts and shamrocks wired onto it (it usually comes in "lassos" of about 10 feet each).
If you go to Michaels or JoAnn Craft stores and talk to the consultants there, they'll probably have TONS of great ideas.

You might want to put a clear vase as a centerpiece with 7 tiny fishes swimming around and a single stem of anthurium on it. or 7 small balloons in a flower arrangement. Putting an obvious number 7 anywhere is tacky. or 7 pieces of decorative candle with flowers and ribbons.

You could have goldfish (or any type of fish) bowls. In the bottom have a lucky treasure box with some clover and heart rocks. Pretty colorful, Make it match the colors of your wedding!

It is the year 2-007....as in james bond 007?
didn't he spend a lot of time in casinos in many of his movies?
maybe you could incorporate something like that. maybe a roulette wheel on some tables with different sayings.. have some candy hearts on the tables for the guests to "gamble" with each other. It could make for a fun party get to know you thing while waiting for the festivities to start.
another table with cards with yours and the grooms pictures on the backs? the game could be "hearts" or a version of poker where the king and queen of hearts are wild.
depends on how "elegant" or "creative" you want to be.

I LOVE the slot machine idea. As a matter of fact, that is what I was going to say until I realized I had been beaten to it! lol
As for other items, I also like the fish bowl idea and the clover idea.

My daughter's first birthday is on that day! As a Wedding Coordinator, I suggest to you: Try some of those chocolate coin candies and scatter them in the center of the table around a vase of flowers, and stick playing cards in the flowers, but maybe use the queen and king of heart cards.
