i pulled a steak out of my freezer and especially on once side it has a very distinct grayish brown color. its not fat. it doesnt smell bad but i dont have a very good nose so i dont know for sure. is the meat still good? is that normal or should i throw it away? i bought the meat about 2-3 weeks ago, it spent a little under a week in the fridge and then about a week or two in the freezer

note that i also microwave defrosted it for about 4 minutes

First you might have 'freezer burn'. Just slice off the offending piece and prepare your dish.

Second you might have 'cooked' it in the microwave. In this case there isn't a problem, just prepare it. The taste will be a little different since you have already 'cooked' it some.

My rule is if I have to ask, or even think about it - toss it and start again. Personally, I won't leave any meat in the fridge for more than 3 days...max. If I'm defrosting it and it goes past that time frame, it get's tossed. If I buy meat and forget to put it in the freezer, and after 3 days I haven't cooked it, it gets tossed. Discoloration like that can't be good and I refuse to temp the fates ;)

I believe that your meat is bad, or at least starting to get that way. You may just have to throw it away. One of the best ways to keep meat is to wrap it well in tin foil, put it in the freezer and then put it in the frig. a day or two before you use it, unless you plan to use it right away. Take care, and good luck in the future with the meat.

Its probably from defrosting it, that happens sometimes, when part of the meat cooks/defrosts more than the other, you need to turn it in the middle of defrosting

Your defroster actually started to cook it, my microwave always does, no big deal. It could be freezer burnt, but i'd bet it's just slightly cooked.

All meat is rotten.

Microwaving meat proteins turns 50% of the amino acid called "proline" into a neurotoxin.

That meat was fed genetically modified canola proteins which have never had any clinical tests on humans. You have no idea what they will do to you. Neither do they.
