Volume! A pig does not produce one offspring, it makes several. A pig also grows to adulthood faster. Sheep do not produce litters of lamb! It simply costs more, and takes more time, to create that shank than to make bacon!

growth hormones have been used in cattle but found to be harmful so cattle are now allowed to grow natrually, the longer you feed them the more expensive they become.Cattle will have some antibiotics etc in the system but from brief research sheep seem to be left alone. On a positive note the meat seems to be pretty natural so maybe worth the extra money....just look at the turkey fiasco lately and then decide what to put in your body and at what price?

It's a very good question, it's true that in Spain you only get baby ones and is very expensive maybe cause it tastes so good and is everyone's favourite meat

I've wondered this myself. The producers say they are not making much profit, so it must be the middle man. Once again it's the customer who loses out
