If he's interested in you, then there's no way to let him down "easy".
"Easy" is the same as "rejection". What you should do is go out to lunch or the movies with him and TALK to him. Let him know that you are cool with him, as a friend, and don't want to spoil that. Tell him that you can reconsider in the future, but right now that's the role you need to fill in your life. Tell him that you're honest enough to tell him these things and see him as someone you can confide in.
If he respects you, then you're good to go.
If he doesn't respect you and only saw you physically, then he's gone afterwards.

Just be honest with him and don't string him along. Let him know that you are looking for something different, but in no way should you say that he falls short of your expectations (even though that may be the case). Only offer to continue in a friendly relationship if you know for sure that he can handle it. If you feel that he is the type of guy that will always want to be with you than do him a big favor and leave him alone all together. Some women use guys in this way in order to meet other people threw the guy or to keep him around when they need a self esteem boost. Don't do this. If he is reasonable and has other options I see no reason why you can't be friends. Make sure you know what category he falls in before you decide. Trust your intuition.

There's no easy way to let someone down. If the person likes you, they will probably be upset when they hear you're not interested. Just tell them you're not interested in a romantic relationship and try your best to handle their reaction in a mature way.
