I had a piece of steak at work that had a little crispiness to it. I was wondering do any of you know the secret to the crunch?

High heat in a frying pan. Sear each side for like two to three minutes. Heat the pan on high and when it's smoking hot turn to medium high add the steak. After both sides are seared put the beef in a pie pan or other ovenable dish and finish for 5-10 minutes.

That outside edge is fat - that is what gives meat it's flavor.

I cook the meat almost to the way I like it then remove it from the pan. I turn up the heat to high and get the pan really hot then sear the meat so it is browned on the outside like a grill does. Turn it over to get the other side and you are done.

You have to keep an eye on it to keep from buringint he steak.

I like my steak a little crispy around the edges too. I usually braise it in a frying pan with butter.

Its a matter of getting the outer edge in contact with a very high heat but for a very short time-just a few seconds -otherwise you'll cremate it

Braise it in butter or on grill, then lower a bit the temperature so that it could be nice and pink inside. Nothing worse than eating a dry overcooked steak... Good Luck.

You need your oven to be as hot as possible and put it right under the broiler with butter on it.
