In estimating the production of my olive grove, here in Spain I allow 5 kl. to a litre of oil.

However, much depends on the olives. It should be remembered that The Spanish on the whole pick their olives before they are fully ripe. That way they wiegh more.

Olive producers are paid for the wieght of the olives and for the oil content. Unripe olives have a higher water content, than ripe olives where the oil content is higher.

The shortage of cash may be a reason why the Spanish pick so early, they receive the payment before Christmas, an expensive time of year. Remember the olives will wiegh more when unripe.

I tend to pick my olives in late january or February. The olives by this time are almost black and the oil is concentrated, we get paid for the quality of the oil not just the quantity.

Last year my oil yield was 29.7 %. My Spanish nieghbours content was 17.2%.

I received a payment the same as him but I grow fewer olives.

My Caniles Virgin Oil is well known in the area, many people come to my door to buy from me.

Caniles is a major olive oil producing area.

5 kg makes a litre.
Each tree produces about 3-4 litres of oil.
