My BF is diabetic, so I thought maybe a few Splenda Sweets would do this year. Anyone know how to make your own chocolate, or where to get special melting chocloate near Albany at this late date?

I'm in Western NY, and I've run into the same problem in the past. There are some good commercial chocolates out there that are sugar free - Russel Stover, for one.

However, if you don't want that. Go to a small candy store, one that specializes in Chocolate - they'll have sugar free chocolates there - and they may even be able to sell you the melting chocolate. NYS law is a little 'weird' when it comes to selling things like that, if they aren't licensed to do so, but the candy shop might do it for you.

I don't know how close you are to Albany - but I just looked up "The Chocolate Gecko" http://www.chocolategecko.com/index.htm They should be able to help you. Even if they don't carry the sugar free chocolates you're looking for, it won't be the 1st time they've been asked about them. They should be able to point you to a shop that can help you.

You can melt any chocolate... darker will have less sugar.

With dark chocolate, since there is less cream and sugar, the quality of the beans are more critical and thus expensive, else it will be bitter.

For the best success with melting, search for tempering chocolate, there are many techniques.
