I can totally relate to you. My girls did not sleep through the night until they were 4 years old. No matter what I did to try and change that. Some people need less sleep than others.
Maybe your child is one of those.
If she manages to sleep 8hs.uninterupted...then maybe put her to sleep later at night so she wakes up at a reasonable hour for you in the morning and her first bottle drink will be her breakfast. She will probably nap again in mid morning and that is totally ok.As she gets older she will sleep more.Try to make the change by delaying her hour by half and hour every night and see how it changes.Best of luck and don't give up.

8 hours is great! You should be happy she is sleeping so well. Our son (15 months now) goes to sleep at 7:00pm and wakes up at 7:00am. He has 2 naps during the day of about 1.5 hours each. 1 nap isn't enough for an 11 month old. I suggest 2 good naps. A baby needs a lot of sleep when she is young.
If you want to help her sleep better, I recommend the book series "The Baby Whisperer" by Tracy Hoggs. She is the BEST! You can also visit her web site at http://www.babywhisperer.com/

Sleep habits are not always a learned behavior....Some children need more sleep than others, some are night owls some are day people just like adults....As long as she is napping, 8 hours is a good amount of time for night,,,,add in the nap/naps/ and she's doing good

I would say there isn't anything wrong with this assuming that she naps during the day.
Some babies, like adults, don't need a lot of sleep.
If the bottle strategy worked for her, perhaps a sippie of water at night will help her. She could be waking from being thirsty, too warm, too cold, etc.
I also assume that she isn't waking up any other family members.

I'd say 8 hours is pretty good. have you given her a sippy cup yet? You should be thinking about taking her off the bottle at 12 months. Now would be a good time to give her a sippy cup to get used to it.At 12 months I took the bottle away from my son and he started sleeping all night. Also, try to get her on more regular food. Mashed potatoes, baked sweet potatoes , mac n cheese, well you get the idea.
