Chili!! Quick easy and even the kids love it. If I get creative maybe some corn bread.

"left overs". I've pulled some Chicken Cacciatore out of the freezer that I made a few weeks ago. That, and some rice. If that's still not enough, I've got some left over chicken and cheese quesadilla that I made last night.

Tomorrow's Friday, so it's fish of some type. Don't know what kind yet though -sorry

I have some cod in the freezer, I think I will bread it, and have cheese garlic biscuits. I also have pork cutlets, love to dip them in egg and roll them in cracker crumbs, and fry them. Trick is to brown them some, turn down the heat and simmer them for awhile, then turn the heat back up to crisp them.
Been about to die for some cheddar cheese potatoes. Wish I had some ham and some cranberry sauce.
I have crab legs too, and I was considering sloppy joe's.
Beef stew with biscuits sounds good too. Whoops, I'm American so biscuits means baking powder biscuits, Bisquick type.
wouldn't mind some biscuits for dessert, though I'm not baking cookies today!

Cream of tomato soup with basil & grilled cheese on whole grain bread. Kind of in a rush tonight, after I get home from school my hubby and I have to head out to a prenatal course.
Otherwise it would be chicken & veggie stir-fry over rice.

Oh lord, I have no idea!!!! I guess we are in the same boat. Last night I fixed a big breakfast for dinner (sausage, eggs, bisquits, and gravy) always a big hit at my house since we never actually eat a big breakfast like that for breakfast.

Pot Roast in the crockpot (Its cooking now while i'm at work can't wait for dinner tonight)
with a side of rice, potatoes, and carrots.

I am having a spinach lasagna tonight. Last night I had Toscana Soup, just like from The olive Garden but much much better. Recipes:

My lasagna-
A box of no-boil Barilla lasa noodles (those cook up best for me)
2 T olive oil
2 cups of mushrooms, one chopped, other sliced
1 chopped onion
1 T minced garlic
4 cups fresh spinach
3 cups ricotta cheese
2/3 cup grated Romano cheese
1 teaspoon salt
1 teaspoon dried oregano
1 teaspoon dried basil leaves
1/2 teaspoon ground black pepper
1 egg
3 cups mozzarella cheese, shredded
3 cups tomato pasta sauce, divided

Preheat your oven to 350 degrees. In a skillet over medium-high heat, cook the chopped mushrooms, onions, and garlic in olive oil until onions are tender. Drain excess liquid and cool. Boil 2 cups of spinach for 5 minutes. Drain, then squeeze out excess liquid. Chop spinach.
Combine ricotta, Romano, the cooked spinach, salt, oregano, basil, pepper, and egg in a bowl. Add cooled mushroom mixture. Beat with an electric mixer on low speed for 1 minute. Lay some lasagna noodles in bottom of a 9X13 inch baking dish. Spread 2 cups of the cheese/spinach mixture over noodles. Thinly layer the fresh spinach leaves over this mixture. Top that with a thin layer of the sliced mushroms. Sprinkle 1 cup mozzarella and 1/3 cup parmesan on top. Spread 1 cup spaghetti sauce over cheese. Repeat layering...
Cover dish with aluminum foil and bake in a preheated oven for 1 hour. Cool 20 minutes before serving.

Toscana Soup-
1 round package of hot Jimmy Dean sausage (ground)
1 cup diced onion
1 1/2 teaspoons minced garlic
3 cups chicken broth
2 cups water
4 potatoes, halved and sliced
3 cups sliced kale
1/2 cup heavy cream

Cook the sausage in a pan until it's cooked through and crumbled. Remove sausage and drain the grease from the pan, leaving just a little bit to saute the onions and garlic. Cook for about 3 minutes or so. In a big enough pot, put sausage, broth and water, onions, garlic, and potatoes- bring to a boil. Reduce heat and simmer for about 25 minutes. Add as much kale as you like, and add the cream. reduce heat to low setting and cook until heated. Serve! Yum!

I'm making spaghetti w/ground venison in my sauce. I'll probably serve it w/ a nice green salad or maybe sauteed spinach (or both) & some crusty French Bread.

we are having chicken thighs,I brown the thighs in hot pan,with some olive oil,brown on all sides,remove the thighs after browning,add half chopped onion,two to three cloves garlic chopped,saute them till translucent,add two tablespoons of tomato paste,half cup left over coffee,half cup red wine,any drinking wine you are drinking, a few shake of hot sauce,or how hot you want it ,stir this together well put in with onions ,mix together ,put your thighs back in,let it come to a boil again,put lid on and let it simmer till chicken is done,I let it simmer one hour or longer,if your liguid is not thick enough,remove your thighs,,turn your burner on high,let your liguid cook down,you will a very nice sauce to pour over your thighs,very good,
