I'm bringing in a dish in a few days...what ideas do you have that would be good? I don't want to bring in a dessert, maybe an appetizer?

A couple of easy ones:

7-layer dip
Layer on a platter in this order: refried beans, guacamole, sour cream, chopped green onions, chopped tomato, salsa, shredded cheese. Serve with tortilla chips.

Lil' Smokies
Dump some Lil' Smokies sausages in the crockpot or saucepan. Add equal amounts of mustard and apple jelly. Heat. Serve with toothpicks.

Pig-in-blanket
Unfold a can of crescent roll dough. Tear into strips. Wrap strips around Lil' Smokies sausages. Bake until golden. Serve with hot mustard or BBQ sauce for dipping.

These would be good as the vegetarians could eat them too:

Mushroom Puffs

Ingredients

1 large sheet vegan puff pastry
2 large flat mushrooms
1 onion
sauce flour
soya milk
vegan bacon
vegan sausage
sun-dried tomato paste
vegetable oil
salt
freshly ground pepper

Finely chop the onion and mushrooms and fry in oil until they are browned. Add 1 tablespoon of sauce flour and stir. Add soya milk slowly to form a sauce. Season with salt and pepper.

Divide the puff pastry into 4 rectangular strips. Paint each with a thin layer of sun-dried tomato paste. Then in one half only put a layer of vegan bacon. Then put a layer of the mushroom sauce. Then vegan sausage cut to an appropriate length. The put a layer of sauce on top and some bacon on top of that. Fold over the pastry and press down all of the edges.

Cook on a greased baking sheet in a pre heated 200 degree oven until golden brown (about 10 minutes).

You can make a Pizza bread, or Polish sausage in sauce.

Sausage in sauce:
1 lb Polish Sausage
1 jar Chinese style Sweet and Sour sauce

Cut the sausage into slices, and place in microwave safe dish. Cover with S/S sauce (may need to add water if sauce doesn't cover sausage). Heat till the hot side of warm - but not HOT.
Serve as is, or with bread and crackers

Pizza Bread
1 loaf raw pizza dough (or 1 box bread dough mix - prepared)
1 lb shredded Mozz cheese
Dried Italian seasoning - optional
Any pizza toppings you want - if you use veggies, precook them, and drain well - the water they leach during the cooking process will make the bread soggy.
1 jar Pizza sauce

Roll out the pizza dough so it's about 1/4" thick - rectangle
Sprinkle dough with Italian seasoning
Spread Mozz cheese out on dough - leave about 1" border
Place toppings sparingly - I usually just use Pepperoni
Roll dough up - jelly roll style - tuck in ends, and seal seam

Let rise for about 30 minutes, score top of bread
Bake till golden brown - usually about 25-30 min @ 350' - but it depends on how big your bread is - sorry.

Some of the oil from the cheese and toppings will leak out - this is normal.

Let cool completely, slice thin. Can be re-heated, or served cold/room temp. Dip in pizza sauce.

NOTE - I've tried adding the sauce directly to the bread dough, and it's just a big mess when it cooks - the bread is much soggier.

Since you're taking something to work, perhaps you need something that will transport easily, not be messy to eat, kind of a finger food? Here are a few recipes that you wouldn't need a knife/fork to eat, and when some of the ingredients are "in season" in your area, really good to serve! Also, non of these recipes need to be kept warm.

Apple Dip

1- 8 oz. cream cheese (whipped, like cream cheese spread)
1 Cup peanuts, chopped
1/2 C. brown sugar
2 T. brown sugar
1 tsp. vanilla

Mix all ingred., serve with apples. (Any type of apple, I like Fuji)

Veggie Pizza

2- 8 oz. tubes of crescent rolls
2- 8 oz. cream cheese
1 tsp. onion salt
1 tsp. dill weed
1/2 cup Miracle Whip (or any brand)

Unroll dough into 4 long rectangles, put into ungreased cookie sheet, press into the bottom and up on the sides. Press perforations to seal. Bake at 375 degrees for 13-17 min. cool.

Mix other ingredients until smooth and spread over crust
Top with vegatables of your choice, make it colorful! Cherry tomatoes, cauliflower, broccoli, peppers of all colors, chives, etc. Sprinkle with shredded cheddar cheese.

Beer Dip

1-8oz. cream cheese
1/2 cup mayo
1 pkg. Hidden Valley Ranch Dressing mix (in a packet)
Beer to taste
Shredded Cheddar Cheese to taste.

Mix all ingredients. Serve with pretzels.

How about chicken parm? You can use chicken tenders instead of chicken breasts to make things easier on cooking and serving. The only thing else you will need to bring are paper plates and plastic cutlery. It is great cold, warm or room temp...but most jobs/offices have microwaves anyway, so no worries there. Its easy to make for a crowd and who doesn't like chicken parm? lol I'm sure your coworkers will just appreciate that they don't have to head out and buy lunch. Free lunches always taste best. :)

I work with 17 women and 1 man so some one is always on a diet. I try to keep it easy for them and just bring spinach dip or fruit salad. Keep in mind that someone may not eat meat and don't make something that will send you back to your desk so full that all you want to do is take a nap.

What about Keilbasa in a crock pot? I make mine with equal parts of ketchup and grape jelly, now I know that sounds gross but everyone here at work loves it. I have also had it with honey mustard and a bit of grape jelly.

If all else fails sheperd's pie is always good and it is easy to make.

INGREDIENTS
5 potatoes, peeled and quartered
1 pound lean ground beef
1 (4 ounce) can sliced mushrooms
1 (15 ounce) can mixed vegetables
1 (10.75 ounce) can condensed cream of mushroom soup
1 (10.75 ounce) can condensed cream of celery soup
salt and pepper to taste
3 tablespoons butter
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Coat a 9x13 baking dish with cooking spray.
Bring a large pot of salted water to a boil. Cook potatoes in boiling water until tender, about 15 minutes. Drain, reserving some of the cooking liquid. Mash potatoes with a little of the cooking liquid. Set aside.
In a large skillet, cook ground beef until brown over medium-high heat. Drain fat from pan. Stir in mushrooms, mixed vegetables, mushroom soup, celery soup, and salt and pepper; heat through. Pour into prepared baking dish, cover with mashed potatoes, and dot with butter.
Bake in preheated oven for 30 minutes, or until potatoes are golden and beef and vegetable mixture is hot and bubbly.

Cook potatoes in salted water to cover. Drain, cool and peel. Mash in large bowl with butter, milk and season to taste with salt and pepper. Set aside. Saute beef until browned, stirring to keep meat crumbly. Season to taste with salt and pepper. Add tomatoes, mushrooms, parsley, tomato paste, Worcestershire and gravy. Stir to mix. Add peas and cook about 5 minutes. Turn mixture into casserole.
Spread potatoes evenly over meat. Bake at 400 degrees 40 minutes until top is crispy brown.
