When the summer squashes are in season, I cook these up with some onion, and mushrooms - and either fresh or canned tomato. You can add some ground beef and serve over rice for a full meal, or you can thin it out and eat it as a zucchini squash soup, or let the liquid cook out, and serve it as a succotash.
I use what I grow in my garden, but I'm sure you can use anything. It's a great way to get a lot of veggies into a meal and not even know you're doing it ;)

The same old canned veggies and obvious choices for steaming like brocalli/cauliflower and salads DO get old. Try coleslaw for a change, or taking brocalli/cauliflower/carrot/celery/sweet onions/cucumbers and marinating overnight for a nice side dish. How about a 3 bean salad? Fried or boiled cabbage?

Roast em - cut into equal sized chunks (pepper, squash, carrot, parsnip, celeriac, sweet potato, tomato, sweet corn, courgette, aubergine, marrow etc etc). Toss in a bit of olive oil, some salt and pepper or herbs/spices of choice, stick in a baking tray and roast at 180 C until done - some things (harder veg like parsnips) take longer so you can put these in first or cut them smaller.
Alternatively, my mother-in-law shoves everything in a sauce pan with a knob of flora margerine and sweats them for 5-10 mins - tastes good and you don't loose any vegetablyness.

A lovely potato bake - or stuffed tomatoes with mushrooms and onins baked with a bit of cheese on top. YUM

I like to grill mine with butter and spices in the summer. Simply create a packet using foil (2 pieces for top and bottom, roll up edges) with the veggies and spices inside and throw them on next to your meat

stir fry your vegetables....... I stir fry onions mushrooms peppers, carrots broccoli. what ever vegetable you wish to mix together you can have a new taste everyday.

I am from Idaho so my obvious answer is Potatoes! So many ways they can be made to... fried...... au gratin.... scalloped baked .....the list is nearly endless......
