I may be wrong in this because I have to remember back some 55 years, but I think we have lost the ability to digest cellulose and the outer skin of sweetcorn is made of that. Please correct me anyone out there who knows, but isn't that what our appendix used to do? It's now an obsolete organ. Creatures like rabbits are still able to digest cellulose, have long appendices and need to re-eat their droppings in order to do this.

Yes, it's a falacy that the body doesn't. Many people think sweetcorn isn't digested because they see it in their stools, not matter how much they have chewed it.
This is because each kernel is covered in a husk that isn't digestable. When you eat it, you digest all the goodness inside, but the husk passes through undamaged.
