If you were the type that needed to be impressed 'big time',I'm sorry but I wouldn't be bothered.
Otherwise I'd cook a meal based on decent ingredients and recipes that I'd think we both like but you being sophisticated wouldn't make a difference to how it turned out.And as I'm as sophisticated as you no doubt you'd find the table layout to your satisfaction.
I'm into food alright but not people who need to be impressed or think they can impress me

I'd cook something nice, but wouldn't worry too much about the presentation. I think that sort of thing is for desperate guys who can't get laid. We could just eat on the porch, or wherever, and relax. Fancy, well-thought-out dinners are for women I have dated for a while and come to care for. Haha, actually, a woman who calls herself "sophisticated" would probably get on my nerves pretty quickly anyway. What this means to me is "stupid and doesn't realize it" or "stuck-up and intolerable". Or both. Just saying!

i am a well educated sophisticated woman and i love it when my love makes me a bbq in the summer and we eat on our deck or makes a home made pizza and we watch the hockey or football game
he does make me very special dinners for surprises or special days like my birthday or when i bought the building my office is in

Beef tips or medallions which required little or no cutting.
Or seasoned salmon on a cedar plank for taste.
Steam some vegetables with it.
Have a small amount of delicate chocolates and coffee for dessert.

Probably crab legs with butter/lemon/salt sauce, maybe a salad with cucumber, tomato, onion, hot peppers, radishes, egg whites, and some good seasons. And for desert some mixed fruit with strawberries, raspberries and blueberries.
