It may be healthier but would surely cost a lot, Why not use sunflower oil, or just plain vegetable oil. You could cook wedges instead cut potato in half lenthwise then in half again until you have wedges 1/2 inch on thick side, don't even need to peel. Put them in a poly bag season with s+p and thyme, pour in some olive/extra virgin oil shake then place on tray and pop in hot oven for 1/2 hour, eat and enjoy. You can keep the bag for about a week so you can use it again and again.

There's no 'healthy' chip, but frying in olive oil as opposed to vegetable oil is a healthier option, just. Instead of frying chips why not try potato wedges drizzled with olive oil and baked in the oven.

You cant fry chips in olive oil as you wont be able to get olive oil hot enough to fry the potatoes.

It is a little bit better. Olive oil has a higher smoking point than veg oils and therefore the amount of sat fats is a little less. But it is still friying. Not the healthiest option.

Olive oil is not meant for deep frying, as it burns easily and cross links - but you can saute' with it safely.
Also, generally deep frying absorbs more oil than sauteing - technique is the key for a healthier alternative.

The healthiest way of eating chips is to eat them whilst doing a marathon.
