My cat drools, too, when I pet her and she is really into it. She also kneads with her front paws. I think that then they are just enjoying themselves, and may well be remembering their kittenhood, and remembering nursing at their mamma's tummy and feeling warm and safe. That's my theory. Just ignore all the dirty-minded answers here.

Cats drool when they are stroked for the same reason as they purr, its because they really like it and no all those perverts its not in a sexual way!
They more they like being stroked the more likely they are to drool, however not all cats do it. Some kneed with their paws, some squeak when they purr, some drool and others get sooo worked up and over stimulated and they bite or lick.

My little girl Sadie does it all the time when I stroke her. She purrs her head off too. I don't know why but I know she's happy at the time. So I just enjoy it. x

Cats have their personalities and seems many are unique. Maybe your cat is just one that has these characteristics associated with how she extends affection.
