There are many mantras in hinduism, and each one has a separate effect upon different type of people. People with emotional psyche may find some mantras powerful but the same mantra may be useless for a logical brain.
Also we have to see, what for we need the mantra. Like Gayatri is for intelligence and moksha whereas Maha Mrityunjaya is for removal of illnes, fear of death or sufferings.
So the purpose for which the mantra is chanted, will decide alongwith the psyche of a person, as to which mantra would be powerful.
However as a general description, the following mantras may be taken as powerful (means giving fast results), ad-seritum :-
1- AUM
2- All Beeja Mantras of Kali
3- All Beeja mantras of shiva
4- All other Beeja mantras
5- All Sagun Mantras
6- Normal chanting like Hare Krishna or Hare Rama
AUM is the most wonderful and mysterious Mantra... it is a Sagun Mantra, it is also a Nirguna Mantra and it is also a Beeja Mantra simultaneously. It is the most powerful of all mantras, irrespective of the purpose it is done for...be it wordly pleasures, knowledge, bhakti or Moksha.

The hinduism that we speak of today derives it's roots from the vedic civilization which was by far more spiritual.
This age is referred to as Kaliyuga and it is advised by Lord Caitanya that one should just chant the Maha mantra. ' Hare Krishna Hare Krishna Krishna Krishna Hare Hare Hare Rama Hare Rama Rama Rama Hare Hare '. This sixteen syllable mantra is recommended for reciting and sanskirtana(Group chanting).
The Gayatri mantra is a powerful chant. Lord Krishna himself used to get up at 3:00 am in the morning to chant the Gayatri mantra.
The chants help to give you mental strength.
The gayatri mantra helps to remove obstacles from your path.
The maha mantra helps to spiritualize your life.

I think " Om Namah Shivay" For Lord Shiva
This ensures peace of mind and elevates the soul.
"Om aing hring kling chaa mundaya vicche" For Goddess Durga
This too is elevating and brings power to self.

AUM has described it beautifully........to know more first you have to decide the rules which you have to follow while chanting the mantras.....normally mantras are associated with Shiva, Vishnu or Shakti ( Durga )..to know more you can refer to Shiv Purana,Vishnu Purana,Narad Purana etc...they have chapters devoted to mantras.
