I want to preserve some seasonal fruit. I have the jars, but not the pot. Is it just a really big pot or does it have some special feature?

It's automatic and does all the work for you, that's what makes it special. You can do the same thing with a big stock pot with a lid and a rack in the bottom.

What is a preserving kit? We use grandma's old kettle with a rack in the bottom for cold packing, hot packing. A pressure cooker for things that need to be pressured! A kit that does all the work? What will they think of next!
