Cathay Pacific or Singapore Airlines. By far the two best airlines I have ever flown. Skytrax, the world's largest passenger opinion survey gives 5 star ratings to only four airlines in the world, Cathay, Singapore, Maylasian Airlines and Qatar Airlines. I've been lucky enough to fly 1st and business class on numerous occasions on Cathay and Singapore, and every class of service on other airlines doesn't come close to what these two airlines offer. And if that's not good enough, both of these airlines are upgrading their 1st and business classes which were already rated the best to include 20" lcd tv's, full length closets(Cathay), designer pajamas, cooked to order meals, beds big enough for two (Singapore), the finest caviar, champagnes , wines, turn -down service for your bedding and on and on. I really doubt if I can afford their 1st and business classes anymore, but your question was hypothetical wasn't it?

Midwest Airlines, the Best Care in the Air. On the Signature Service, the seats are 2 x 2 and extra large for extra space. The seats have extendable head rests for those of us that are tall and a foot rest that folds down from the seat in front. The Mader's food served on board is excellent.

For the low cost I think I take Malaysian Airlines, not so many Stops like Emirates and very good Cabin Crew
For the rest, as I always have good impression is Singapore Airlines.

Ok well i try to stick with Qantas as i can, although they are quite expensive. JAL -Japan Airlines are very good, Singapore airlines are an exceptional airline, they have had one major accident although this was caused by poor airport operations (someone parked a truck on the runway).....
Emirates are excellent, though rather expensive.
I believe Virgin Atlantic are good.
Avoid any chinese and russian airlines, garuda indonesia and any american airlines....

Virgin Atlantic is great for economy class. You get your own T.V. with about 30 movies to choose from, lots of t.v. shows, a live trivia game to play with the other passengers. You have a phone by your seat where you can call the other passengers for free by dialing their seat number. There's an interactive map to tell you exactly where you are and how long till you arrive. They only hire attractive flight attendants (i'm not joking), and you get all the free drinks you want. Best coach class i've ever flown.

I'm in the US (Not sure what country's airlines you are looking for) and my #1 choice is USAir because they have the most non-stop flights from my home airport to places I need to go. #2 is United because occasionally they will have a non-stop when USAir doesn't, and because I can fly United and have them send my miles to USAir. I also like USAir best because their frequent flier program works best for me. I get upgraded to First almost all the time because of my frequent flier status.
