I used a wonderful book that I can't for the life of me remember the name of. It was spiral bound and had tons and tons of worksheets, as well as photos of flowers, and rules of etiquette. I bought it at Boarder's Books and Music.
Go to your local bookstore and thumb through some books. Each is set up differently. Find one that you like.
As far as advice, I prefer Brides Book of Etiquette by the publisher's of Brides Magazine and Wedding Planning for Dummies. Those were the books I used and have since loaned to friends and family. Which reminds me....I need to track them down and get them back...
I also kept a binder with all my vendors, contracts, recipets, ideas, etc. I had dividers set up for flowers, reception, ceremony, party attire and misc. I think I still have the binder in the closet.

I would recommend the following organizer: http://search.barnesandnoble.com/booksearch/isbnInquiry.asp?z=y&EAN=9781887169691&itm=11
This book is similiar to the one I purchased for my wedding. It has guidelines and worksheets for planning your wedding as well as a large accordian file that you can use to store your contracts, budgets, ideas, etc. It's so helpful because you can keep everything in one document.
