it´s my dad´s 50th birthday. i made him a carrot cake and i heard that cream cheese icing is good for carrot cakes. problem is i have no time to go to the store to buy powdered sugar nor vanilla extract. help!

Me again - you don't need to go out and buy icing sugar - assuming you have normal sugar and a food processor or a blender - just process some normal sugar until fine.

Fluffy White Frosting

INGREDIENTS:
1 cup white sugar
1/3 cup water
1/4 teaspoon cream of tartar 2 egg whites
1 teaspoon vanilla extract

DIRECTIONS:
1. In a saucepan, stir together the sugar, water and cream of tartar. Cook over medium-high heat until the sugar is dissolved and the mixture is bubbly.
2. In a medium mixing bowl, whip the egg whites and vanilla to soft peaks. Gradually add the sugar mixture while whipping constantly until stiff peaks form, about 7 to 10 minutes. Frost the cake of your choice.

Carrot Cake Icing

1 1/2 cup of sugar
1 cup of buttermilk
1 teaspoon of soda
1 teaspoon of black walnut flavor
1 tablespoon of Karo

Boil first 2 ingredients to soft ball stage, remove from heat and add next 3 ingredients and mix well.


Try this one instead and post how it turns out.

Grind your regular sugar at home to get powdered sugar. As for the vanilla, you really don't need it. However, if you like you could substitute it with finely grated lemon rind.

Lemon flavoured icing goes perfectly with carrot cake.

Granulated sugar can be gritty. If you have corn syrup or honey you can whip that into your cream cheese. You can use lemon or orange juice to substitute for vanilla. The rinds from the lemon or orange will give it great flavor too.
