Wild rice isn't rice at all; it's a species of grass, but good to eat. Basmati rice is deliciously fragrant, fairly expensive and real Basmati rice comes from a particular area of India, just like real Champagne has to be grown in that part of France. Jasmine rice, as its name suggests, has a jasmine aroma; it comes from China. Couscous comes from North Africa. It's the same as semolina; part of a wheat grain. You boil it in water and serve it as either a runny porridge or with the consistency of mashed potato. Dunno anything about farro or spelt. Polenta is made by boiling corn meal in water and frying it. It's Italian. Romanians make a similar dish called mamaliga, and Mexicans also make something similar. With the exceptions of basmati and jasmine rice, all these dishes are fairly bland, so you flavour them with something with a strong taste; onions, garlic, cheese, fish sauce or meat, depending on which country's cuisine you're making. Uncle Ben's Rice is instant rice. It cooks more quickly than any other rice, but I don't know the secret.
