Hi there, you old romantic you! I am going to seem really boring here, but on the other hand I am a man so I can tell you what I would like. Presentation is vital, so make sure you are looking fantastic and wear nice underwear. make sure he knows that you are, so he has something to think about over the meal.
Irrelevant? I claim not, because the meal I am going to suggest is:- the nicest big piece of steak you can find, done with fried mushrooms and tomatoes, with a baked potato and onion rings on the side. For a starter, prawn cocktail (jar of sauce from any retailer). For pudding, Marks and Spencer do a Sticky Toffee pudding to die for (their bread and Butter pud is stunning - with custard if he is a big eater, single cream if not).
Men are simple souls. Honestly, we are.

make spaghetti garlic bread and a salad and or steamed broccoli and your choice of drinks. and why not a bowl of ice cream and chocolate syrup for dessert. make large portions. :) use italian sausage in the spaghetti and get parmesan cheese. use spinach for the salad and whatever else you want to put in the salad. use garlic salt for the garlic bread and butter.
should be ok with spaghetti. if you want, get a cake or another type of dessert you know he likes. apple crisp is easy to make from fresh apples and it's good. if its too much trouble just get something at the store for dessert. and as far as presentation i'm sure that wont be a problem; if you are cooking use the fan above the stove or air the place out.
I think the main thing is the thought behind cooking a meal; it's a nice home cooked meal a nice gesture and a thoughtful act; especially from someone that isnt that good a cook.
be confident in what you do make. if you cant cook it; don't try. best not to stress him out with the details of ingredients and if the chances are it will be a ruined dinner; dont attempt it.

chicken chasseur!
its sooooooooo easy -
2 chicken breasts, skin and fat removed
100g unsmoked bacon, de-fatted and chopped
1 medium onion, chopped fine
100g mushrooms of your choice, sliced
125ml chicken stock, made from a cube or powder
40ml white wine (or just a splash if you don't want it too overpowering. Put extra stock if you do this)
12g plain flour
1 clove garlic, finely sliced
1 bouquet garni sachet (like a teabag but filled with mixed herbs)
15ml single cream
1/2 red pepper, finely sliced (optional)
Place the chicken in an oven proof casserole or roasting tin.
Fry the bacon and onions until soft (about 5 minutes).
Add flour and cook for 30 seconds.
Add mushrooms, stock, wine and garlic, stir, and when its all bubbling, pour over the chicken.
Add bouquet garni sachet.
Cover and cook on 175 deg, gas mark 4, for 60-80 minutes.
Stir in cream and peppers 10 minutes before the end of cooking time.
Serve with hot buttered new potatoes and your choice of vegetables.
Its sooooooooooooo tasty and sooooooooooo easy you wouldn't beleive!
You can serve melon with raspberrys, blackberries, tayberries etc to start, and dessert could be Marks and Spencers 'melt-in-the-middle' chocolate puddings with cream.

Chinese food is simple, quick and delicious and you don't have to be Gordon Ramsay or Gary Rhodes to make it.
Supermarkets like Tesco sell ready made stir fry packs and spring rolls you can bake in the oven.
Uncle Bens does ready made fried rice that needs about 10 mins in a frying pan. There are also straight to wok noodles, easy and fast. Add a little soy sauce and you've got it made girl.
Serve the Spring rolls as a starter with a chinese leaf salad.
Next comes the stir fry with the fried rice
After, comes the dessert.
Fantastic.
