Depends on how long the two of you have "known" each other. If it has been for only a short time (6 months or less) a card would certainly be appropriate. If more than 6 months and you really like him, a nice card with a note tucked inside to meet you at a favorite restaurant for dinner or if this doesn't appeal to you, send him a nice bouquet of flowers at his place of business or a bottle of his favorite wine.

You say you're dating, but not a couple. How many dates? If only 2 or 3, & you're sure he doesn't consider you a couple, then I would advise against getting him anything--ESPECIALLY if he's said he wants to take it slow--you may scare him off.
If you've had more than that, & he's said he wants to take it slow, get him something un-romantic, but related to his interests.

By the way, you should keep his income in mind--if he makes a lot of money, don't try passing off something from the dollar store, if he's not so well off, make sure you don't get something he couldn't afford easily--it'll make him uncomfortable at best.

If you 2 have been dating for awhile, & he hasn't said he wants to take it slow, or something like that, then you should really think about what he likes--you should know more by now.

Of course, if you are already intimate, then some sexy lingerie and an invitation are always a sure winner!

If you aren't a couple, are you going on a Valentine date? If so, give him a card and a pair of fun Valentine boxers and some chocolate covered strawberries (that you made) or bake him some cookies. If you aren't going on a Valentine date, don't get him anything.

Firstly, how can you be dating a man but not be a couple? Do you have an open relationship (fukk1ng who ever and when ever they want)? Or are you friends-with-benefits?

If either of those apply, why not a pass into a club or some sort of thing like that ?

I thought Valentines Day was for Lovers? As an adult, I wouldn't get him anythng because it might scare him away. What if he was taking someone else out on Valentines Day, wouldn't you be embarrassed?
