That's what is nice about Catholicism specifically as opposed to Christianity extremism. We believe that Adam and Eve is more metaphor.
So, to answer your question regarding race:
There is no such thing as race. There is no racial gene, nothing that differentiates a black person from a white person. It is strictly based on how close you live to the equator and how dark it makes the melanin in your skin. The melanin in one's skin is dependant partially on where you live and partially on how much is in your parent's skin.
As for Adam and Eve, the answer can lie in scripture but also in Jewish texts. Adam and Eve's third son, Seth, found a mate (doesnt say where she came from) and the line descends from there with people living almost 1000 years as the Bible says, they were able to have many children which spread out among the land.
As you can see, that is why Catholics see it as more metaphorical then literal...it doesnt and cant make sense in the literal fashion, even though many extremist christians do see it that way.

Three possibilties
The MOST likely is that Adam and Eve's clan probably had incestual relationships because the Bible does not say God made more people. (Even under the scientific theory this would have to had happened also to a degree.)
BUT, the Bible does say that the "Sons of God" saw the "Daughters of Man" and found them fair and took them as wives.
So this, now, provides for two disitinct and different Gene pools and as to which was which color, that's an unknown.
That is one explaination.
Another explaination is that God mixed up and created the races, just like God did with the Langauges to confound man.
That's another possible explaination.
Finally, man migrated and it is possible that after eons of evolution in the North and Eons in the deep South of Africa, man evolved diffenretly from the original base creation.
The explaination that has NO foundation is that God created more humans, but if that is true it's NOT talked about the in Bible and it is HARD to Fathom since God was angry with Adam and Eve.
If GOD created another human, they'd be in Eden and God would try again hoping they wouldn't eat the apple.
I can't see God just created 1,000 more people like Adam and Eve as a reward for the original sin.
That has no foundation in logic or documentation in the Bible.

You Racist lol I'm just kidding. Well adam and eve are not true most religious people know that. Since there were no writings or languages at the birth of humanity. Adam and Eve is complete nonsense. We are different colors due to adaption I could give you a couple theories but I'm not absoulutely sure myself so id be lying through my teeth.

This is just my opinion, understand.No religious or doctrinal proof. I believe that when God created man, He made him from dirt. Most dirt in the area of the Middle East is brown to dark brown. I do believe that man was made physically perfect and would not have aged or died except for the disobedience of the fruit. This changed the DNA of man to mortal. The sun affects the DNA of skin. I propose that God cursed Cain for killing his brother by taking away the pigments which protect humans from the hot sun and Cain became white and traveled North. When God confused the languages at Babel many people scattered to other parts of the world. There was mixing of the races because of the language problems thus creating the predominate racial colors. As man increased in wickedness racism became more prominate and thus grouping and nationalities became more important. How to explain the flood my way is that Noah's son's were married to women of different colors and they weren't racist either. I am just supposing all of this but if one has a stong belief in Father God's ability to bring about His purpose for mankind the reasonable just follows. I am a Christian and I believe that my Father can do anything!

i believe everybody r racists to a degree...
some keep it to themselves n figured since we r all stuck together on earth anyway, might as well try to get along...
while others don't feel it's worth the effort...
anyways, i don't think we should interpret that adam n eve story literally...
eventho, it is possible that there r quite a few pairs of adams n eves of various skin colors, n the couples who failed the test got dumped here on earth...

My theory is...God destroyed everyone in the flood when Noah built the ark...afterwards Noahs four sons(their wives) went out into four different directions(N.S.E.W) and began to populate those areas, from there the climate explains the rest...makes sense to me b/c in the summer i get darker in the winter I get lighter again. If i lived in a hot climate(alot of sun) year round i'd stay dark. That's how I see it.
