I drink different kinds of fruit juices, some of which say "from" and others that say "not from" concentrate. I am just wondering what the differences are, and/or if one is healthier than the other, etc.

If it's concentrated It means its not diluted. Liquids have been drawn out. Plenty of healty juices are not concentrated...takes the work out form having to add your own water:)
From Concentrate...less water or the like was added
Not From Concentrate...more water or the like was already added to dilute it.
Example: Frozen juices are usually "from concentrated" so you need to add your own water.

From concentrate basically means more processing. It does not refer to rehydrated, which would be made from a dried product, as with powdered milk. Rather, it refers to taking a form that has had water removed. With juices, this process may occur by boiling, and usually reduces the volume to about 25% of the original volume. This is often done to cut down on shipping costs (they're not shipping the 75% of the water that has been removed). When the juice is bottled or cartoned, water is added back. Generally speaking, juices NOT from concentrate have a much fresher flavor. They often cost more, too, because they are a more premium product and are a little more expensive to ship.

As far as nutritional value, I'd look at the ingredients. Many will have some sort of preservative depending on the type of juice. I'd look for ones with no added sugar/corn starch, and minimal added preservatives. Also, juices with pulp may also offer a little more fiber or nutrients ... though that I'm not sure about. I'd generally say fresher and less processed is better.

"From Concentrate." Water is removed from whole juice to make concentrate; then water is added back to reconstitute to 100 percent juice or to diluted juice such as lemonade.
"Not From Concentrate." This juice has never been concentrated.
"Fresh Frozen." Freshly squeezed, packaged and frozen without pasteurization or further processing. It is usually sold in plastic bottles in the frozen food section of the grocery store and is ready to drink after thawing.

"100% Pure" or "100% Juice." Guarantees that the product is 100 percent fruit juice, complete with all its nutrients.

"Cocktail," "Punch," "Drink," "Beverage." These products are diluted, containing less than 100 percent juice. They often have added sweeteners.

"Fresh Squeezed Juice." Squeezed from fresh fruit. It is not pasteurized and is usually located in the produce or dairy section of the grocery store. Be cautious about offering non-pasteurized juice to children, older adults or others with compromised immune systems.

You can buy frozen concentrated juices at the store, too. You just have to mix it with water to dilute it and make it taste right. This is juice 'from concentrate'. Freshly squeezed or pressed juice straight from the fruit to the [pulp siv, holding vat] container is 'not from concentrate'.

From concentrate means that the original juice was dehydrated to the consistency of a thick syrup, then frozen. It is then sold to juice companies who reconstitue the juice by adding water to bring it back to it's original taste and consistency.
Tang and other such drinks are artificial.
