*** thank you all so much for the great ideas! i think the hubby & i will be baking this weekend, we are trying something new each weekend, its cokkies this weekend! its so much fun!

These are the best. I made the recipe up myself. Everyone who has eaten them loves them!

Oatmeal Kitchen Sink Cookies

3/4 c Butter - softened
1 c Packed brown sugar
1 Egg
1 T Milk
1 t Vanilla extract
1 1/2 c Uncooked old fashioned oats – not instant
1 c All-purpose flour
1/2 t Baking soda
1/2 t Salt
1 c Semisweet Chocolate Chips
1 c Milk Chocolate Chips
3/4 c Heath Toffee Chips (or 3 heath bars chopped)
1/2 c Sliced Almonds

Preheat oven to 350 degrees.

Cream butter and brown sugar together in a large bowl, add egg, milk and vanilla. Continue mixing until light and fluffy.

In a separate bowl stir together the oats, flour, baking soda and salt. Slowly add the dry ingredients to the creamed mixture.

With a sturdy spoon, stir in milk and semisweet chocolate chips, toffee bits, and almonds.

Drop rounded tablespoons (or a mini ice cream scoop works well for this) of dough about 2 inches apart onto an ungreased cookie sheet or a cookie sheet that has been lined with parchment paper (recommended).

Bake 12-15 minutes until lightly brown around the edges. Cool 1 minute on cookie sheet.

Remove to wire rack; cool completely. Makes about 3 dozen cookies.

Chewy Crispy Coconut Cookies

NGREDIENTS

* 1/2 cup butter
* 1/2 cup packed brown sugar
* 1/2 cup white sugar
* 1 egg
* 1 teaspoon vanilla extract
* 1 cup all-purpose flour
* 1 cup crushed cornflakes cereal
* 1 cup rolled oats
* 1 teaspoon baking soda
* 1/2 teaspoon salt
* 1/2 teaspoon baking powder
* 1 1/3 cups flaked coconut

DIRECTIONS

1. Preheat oven to 350 degrees F (175 degrees C).
2. In a large bowl, cream together the butter, brown sugar and white sugar until smooth. Stir in the egg and vanilla. Sift together the flour, baking soda, salt and baking powder; stir into the creamed mixture. Add the oatmeal, crushed cereal and coconut and mix until combined.
3. Drop dough by teaspoonfuls onto a cookie sheet. Cookies should be about 2 inches apart. Bake for 10 to 12 minutes in the preheated oven. Cookies should be light brown at the edges and on the bottom. Remove from baking sheets to cool on wire racks.

I like the recipes at quakeroats.ca. The Vanishing Oatmeal Raisin Cookies are very good. I know you were looking for a cookie recipe but I also tried the Quaker's Best Oatmeal Muffins. They were quite a hit as well.

Oaty Biscuits

Ingredients

100g vegan margarine
25g sugar
125g self-raising flour
75g porridge oats
2 drops almond extract

Cream the butter and then add the sugar and mix thoroughly. Add the other ingredients and mix again. Roll out on a floured surface and cut out with cookie cutters. Place on a greased baking tray and cook in a 200 degree oven for 15 minutes turning the tray around halfway through cooking to ensure they are evenly browned.

Oatmeal Chocolate No-bake Cookies

Ingredients:
2 cups of white sugar
1 stick of butter or margarine
1/2 cup of milk
1 teaspoon of vanilla
1/2 cup of peanut butter
2 tablespoons of cocoa powder
3 cups of oatmeal

Preparation:
Mix the first three ingredients in saucepan. Boil for one minute. Remove from the heat. Add the remaining ingredients. Scoop and drop by tablespoon onto wax paper and cool.

If you pick up a can of Quaker Oatmeal their is a pretty good recipe on the inside of the lid. I make the lid and have used the recipe. It is not bad.

i'm a pastry chef and have tried tons of oatmeal cookies, and my fav recipe is the quaker oats recipe. they are just the best. i under cook em just a bit so they are nice and chewy but the very edge is a little crunchy.....mmmmmm cookies!!!

I use the one on the Quaker oats box. If you add about 1/4 cup of coconut, it makes them moist.
