Surda and some dudes from Muspelheim will come in, battle Odin and the gods, wipe everything out, everything will die, and the world will start over.

Almost everyone get's killed. Ragnarök is the twilight of the Gods, even most of them perish. It is however my belief that they are reborn. Asatru has a tradition about folks being reborn down through the family line, the same would apply to the Gods.

And I believe it is purely symbolic of the time when Christianity conquered the land. (Which already happened.) I don't believe in a future apocalypse and I also believe the later myths were influenced by the Christians who wrote them down.
