Besides the obvious, being that mint is commonly accepted as a pleasant aroma for a mouth to smell like, it's probably really easy to mask the nasty taste of what toothpaste is made out of with mint.
But I believe Colgate has a bunch of new flavors, like orange and cinnamon and such.

I think, for some reason, our culture values mint as "clean" feeling and tasting. It is also noteworthy that mint has a "feel" sensation, as opposed to fruit flavors. You can also kind of "feel" cinnamon too.

probably because mint settles the stomach ,so in case you swallow the tootpaste with all the chemicals in it the mint may keep you from becomming ill
