What this sounds like to me is a dirty throttle body. if it has carbon deposits inside the butterfly clip will be sticking, this is a usual fault that i used to deal with, with mk 3 golfs (tech at vw). this is mounted underneath the air cleaner box. to clean it its recommended to use carb cleaner or the like. and once finished give the linkages a spray with WD40, BUT be warned if you clean it make sure nothing goes down there, or there will be problems, you will prob find the ecu needs resetting back to basic settings. (can only be down by a machine) sometimes they will gain the settings automatically but you will have to thrash it about for a bit. (high revving etc)
To get this job done at vw it will cost about £125.00 inc, but they may want to charge for 30min diagnostic too £56.00.
You might also find a contributing factor to be the coolant temp sensor (Sensor £10.00), (coolant £7.00) (Labour £65.00), if this gives the wrong reading you may find the engine is staving of fuel, because its electrical it might not be a permanent fault just on occasions known in the trade as intermittent...
the throttle body wont show up on a 1551,1552,5051, or 5052 (diagnostic machines) although the temp sensor would.
I wouldn't initially look at the possibility of it being an oil pump, this is too far along the line.
Dont forget when the engine cuts out or starts to splutter the oil pressure warning light will show on the dash panel, this will happen in most cars, same as if you stall it!!!

Replaced the dipstick? Why? Is this new dipstick the same length as the factory unit? Did you make sure by physically checking it side by side. Because you mentioned it, it is the change that I want to look at first. And this is the reason why.......Now I don't know if they have them in auto engines....but in "home use pressure washers" powered with a Honda single cylinder motor....the motor has a sensor, that when the oil is too low (resulting in low or zero oil pressure) it will shut the motor off. It cannot be restarted until the oil situation is corrected. This is to protect the motor from seizing. I think it would be smart in cars.
Maybe vw has them,(I don't stay boned up on every car) and if that is so, and the dipstick is not the same as original then there is a possible reason why it shuts off. You are low in oil and starving the oil pump. As the oil leaks down from the head back into the oil pan, it refills above the sensor.
There may be more than one length of dipstick for this engine(the only way to know is ask Parts at VW dealer.
Second guess is a semi-blockage in the oil pickup area....but I rather doubt it if you have been changing your oil when you were suppose to.

Wow that is very strange. That car has two different oil senders on it but as far as I know neither would shut the car down. Does it give any other warning? Other lights come on? The oil pump does go out on that car but in most cases you hear noise on start up and the light will flash off and on at idle.
Have you had someone with a VW tool check for codes. It could be your having some other problem that the car may store a code for. Wish I had more information for you good luck!
