Just strike up any topic; usually, however, it depends on the following things:
1. Age (for example, you wouldn't talk about an R-rated movie with a third grader)
2. The type of girl (her likes, dislikes/hates, if she is an activist, if she is a bully, if she is random and spontaneous, etc.)
3. What you know (as in things you would be able to talk about. For example, a boy would be able to talk about wearing lip gloss [if you do, please don't mention it!])
4. Maturity (referring to both you AND the girl. Don't talk about topics you can't handle; for example, some people burst into giggle fits or feel queasy or uneasy upon hearing the word "sex")
5. How confident you are (it may be hard to just go up to a girl and say "Hi" if you are shy. I know; I was once at that stage. Just try to muster up enough confidence to say SOMETHING. Even if it's something stupid, you'd know you had enough confidence to talk to a girl. Though, for embarrassment's sake, TRY NOT TO SAY SOMETHING STUPID!! No pressure though. Though there are many stupid things that can be said, there are WAY more, eh, NOT-stupid things!)

If none of that works, I suggest just starting off with "Hi"/"What's up?"/"Hey there, !", following up with "How's it going?"/"How are you?"/"How's life?", and from there, a topic will [hopefully] be sparked.

You are asking the wrong question. The answer to your question is go google "pickup lines". But in reality, there is no "a" good thing to say to start a conversation. I can't help you much because I'm not that good with starting a conversation with girls.

Go up to her and ask her the question you just asked. For example, "Hi, what would be a good thing to say to start a conversation with you?" See what happens :-)

Some thing that would grab her attention right away. Ask her questions. Talk about yourself. Talk about whats happening. Think logically. Be cool. Don't worry too much about what to say or your mouth would go silent. If she gets too offended and walks away, let her go. Either she comes back to you or stays away. If not remember There's a plenty of fish out in the sea.
