pretty dry, almost crumbly, but able to form a ball: if you are balling then pressing into shape. if you are rolling it should be a little softer and smoother and will need to be kept cold when rolled out to cut out shapes.
p.s. the "Best Recipe" cook book version will ruin all other sugar cookies for you and everyone who eats them. they are the ultimate!

It should be smooth and firm, like peanut butter (but firmer). If yours was crumbly but still formed a ball, you probably hadn't mixed it enough.
Once I made sugar cookies but forgot to add the sugar! It's a good thing I like cookie dough, as I discovered my mistake before I baked any. I added it last, and the dough and cookies turned out a little gritty. As I like texture, I liked it (maybe I'll do it again sometime. . .).
If your final cookie was good, you've got no worries.

If it rolls into a ball you're doing fine, but that dough should be refrigerated over nite before you cut or roll it for best results

It should be moist enough to stick together when you roll it into a ball and then flatten it so you can roll it out. If it is too crumbly to roll out add a little water.
