How is non-alcohlic beer brewed? More specifically, how is the alcohol removed or not present during the brewing process? I know that there is a small amount of alcohol in it, but how do they keep the levels of alcohol so low?

It's brewed as any other beer. There's no special yeast that produces co2 without alcohol. It's not boiled or distilled using heat...rather, without using a significant amount of heat.

The beer, once brewed is then subjected to a vacuum. This significantly lowers the boiling temperature of alcohol (and water) and requires only a small amount of heat to get the alcohol to boil away (around 110 F) and this prevents the extreme heat needed to boil at regular atmospheric pressure from destroying the flavors.

They limit the amount of yeast and use a type of yeast that doesn't activate easily at the temp and pH of the beer during brewing. This in turn directly affects the fermentation process to produce a tiny bit of alcohol but not very much but still makes it fizzy or foamy by producing CO2. .... If you have ever had NAB it does have kind of yeastie taste to it. They DO NOT boil or distill the beer as this would affect quality and taste and kill all yeast used to produce a natural carbonation and fermentation.

They boil it, so that all the alcohol disipates, like when you cook with wine, all the alcohol is boiled out.
