Buddhism is a non-theistic religion.

Confucianism is more of a philosophy but some people (usually government census takers) consider it a religion. It does get that label sometimes, whether or not it deserves it.

Shamanism can fall into this category but I don't have the name of a specific shamanic group. It tends to be practiced by individuals rather than groups.

Some Wiccans see deity figures as archetypes rather than actual deities. There's an old saying in the Neo-Pagan community that if you "ask ten Pagans, you'll get thirteen answers" on anything to do with their religious beliefs.

Also, there's the Church of the SubGenius. (Lots of stuff on that one online.) Most people think it was originally intended to be a joke. I'm not sure how many people take it seriously enough to follow it as a religion, but some actually do.
