yes. like chicken a'la orange, pork ham out of pineapple juice, etc. the thing is to use it as a replacement for vinegar or as a 'kicker' - for dishes in gravy or sauces add a tablespoon or two of pineapple juice once you put off the heat as it will zest the flavor up. take this great example - braise prawns in lots of minced garlic and season with salt and pepper then simmer shortly in (just) some pineapple juice then you'll find the wide-world difference and goodness and it'll make you simply just try other juices with other dishes

You can't substitute juice for oil, but you can add the juice and or especially the zest of the citrus to recipes by adding it to marinades, in dressings, or just spritz the lemon, lime or orange over the finished product for a bright, fresh tang. Remember when zesting to get ONLY the color off the outside; the white pith is bitter and nasty.

yes, most recently on SB Sunday - i used apple juice w/brown sugar and honey to make a glaze for some little keilbasa appetizers - i made it up, i went over really well.
