I love to make this every couple of weeks, it makes a huge batch and keeps really well in the fridge.
zucchinis, chopped
tomatos, chopped
capsicum, chopped
minced garlic/ginger
tiny bit oil
Heat the oil in a wok and add the garlic. Throw in all the vegies, mix around a bit and then cover with a lid and let it ssimmer for about 20 mins or until the vegies are soft and cooked. Stir often to mix up the vegies and to coat them in the ginger.
It's great by itself, just reheated and sprinked with salt. It is also great with fish, pork and chicken.

Zucchini is SO versatile! I like to slice down the length of the zucchini with a vegetable peeler, and slice into paper thin "ribbons". From this point, the marinade/ dressing possibilities are endless. Serve as a side dish. My favorites are vinegar/sugar/water/parsley or an easy mix of equal parts ranch and sour cream. The seasoning possibilities are endless. It is also wonderfil brushed with olive oil, seasoned to your preference, and grilled or baked. I also add to lasagna. Or simply cube and toss with diced fresh tomatoes and italian dressing. If you do a search on the internet for zucchini recipes, you will find hundreds of recipes! Happy gardening!

If you want to go healthy, you could slice the zucchini thinly and put it on a grill or grill pan, then brush on any kind of sauce you like.

have you tried fried zucchinis and potatoes all you have to do is put potatoes and zucchinis in a frying pan and cook for about 20 min add any flavor you like i like salt black pepper and butter
