So we made the lasagna and just stuck it in. But we made too many noodles because they expanded (the dish wasn't deep enough for another layer). Any ideas what to do with the leftovers? Isn't there a dessert that uses lasagna?

Apple and Noodle Dessert

Ingredients:
5 cups cooked egg noodles
4 peeled apples, coarsely grated
1/2 cup sugar
5 tablespoons butter
bread crumbs
1/2 teaspoon vanilla (or a few pinches cinnamon)
Instructions:
1. Combine noodles, apples, sugar and butter. Toss lightly and transfer to buttered casserole sprinkled with bread crumbs. Flavor with vanilla or cinnamon. Cover and bake at 350' for 30 minutes until apples are cooked.

Leftover Lasagna Noodles

One thing you can do is to keep the noodles in water in the refrigerator for a couple of days. When you need a quick meal take the noodles out and drain them completely. Then take cheese or cooked hamburger and spread on each noodle. Roll it up like a jelly roll and put in a baking dish pour your favorite sauce on top and bake for a few minutes or until hot. You could use cooked roast, chicken, turkey or any kind of meat or even use spinach, mushrooms, what ever you have a taste for and have on hand. I have done this quite often and served it to my kids as a quick lunch as I made it ahead sometimes even freezing individual servings.

You can refridgerate the noodles and use them later in the week. Everyday Italian chef Giada makes a great "lasagna roll" recipe- stuffed with ricotta cheese and spinach and topped with a bechamel sauce. You could also cut them into strips using a pizza cutter and add them to a soup. Good luck!

I love to take any kind of leftover noodle, saute in olive oil and serve with fresh grated parmesan cheese!
