For the filling we are using ricotta cheese, Kraft Italian crumbles (mozzarella, provolone, romano, and asiago) and spinach. We're using Chunky Mushroom Ragu for the sauce. And topping it off with Parmesan.

Sound ok?

Well done! I am sure he will love it! The starter sounds OK to me on it's own, but I worry that it might be a bit too filling for the lasagne, which is almost a meal in itself - pasta is very filling. May I respectfully suggest this. It also doesn't actually need cooking, and can be made in advance. MOZZARELLA & TOMATO SALAD Serves 2 INGREDIENTS 100g packet of Mozzarella cheese 1 large beef tomato 1 small bunch of fresh basil 2 tablespoons of olive oil* Ground pepper to taste METHOD Open the pack of cheese and drain off the liquid. Wash the tomato. Wash and chop the basil. Cut the cheese into an equal number of slices. Cut off the top and bottom off of the tomato, and then cut it into an equal number of slices. Arrange the cheese and tomato on two small plates, overlapping the slices. Sprinkle on the chopped basil. Dribble on the olive oil. Season with the pepper. ADDITIONS & ALTERNATIVES Add a sweet Spanish onion. Peel it, cut off the top and bottom, and then cut it into an equal number of slices. Add some stoned olives. Serve with ciabatta or focaccia bread. * Ideally, you should use extra virgin olive oil for salads. However, if you only have the normal stuff, you can use that instead. With the lasagne, I'd just serve a simple mixed green salad with cherry tomatoes to be different from the starter.

Sounds fine. If it were me, I would beat the ricotta cheese and spinach together in a food processor. And I would sprinkle the crumbles in between the layers.

ehhh.... how about a homemade sauce..they are pretty easy and will make a big difference. I like the 4 cheese idea. Do you have access to a really good ricotta. Look for one that does not have stabalizers in it.

It sounds good! For a healthier, meatier, lasagne, You could add a layer of portobello mushrooms or eggplant (silced thinly as your top layer). What you have is very similar to mine, but I add the extras! Either way though, tasty!!

sound awsome just dont use too much sauce and mix two eggs in the ricatta. the eggs help to keep the cheese from becoming too lose you dont want a runny lasagna

I personally wouldn't like it because I don't like spinach or mushrooms, but it does sound good. I hope everyone you are feeding it to likes it.
