Dang this is a toughy !
I love to cook, though you've left me with one tough choice here to create an entree here, though after long consideration I have come to the following decision.
place some of the celery between goat cheese, then wrap with the thinnest cut of proscuiotto - hope I spelled that right - you can get making pockets about 1 inch square, dip in egg yolk then roll in fine breadcrumbs, deep fry until lightly golden which will let the cheese melt perfectly.
This is not only a fair task for prepparation, it will also need to come straight from the fry - after an oil drain on absorbent paper of course - to the table while the cheese is still melted inside with toothpicks in them for dipping..
But one thing for sure. If these little babies are dipped into a cranberry sauce, you will have an exploding flavour sensation.
You've made me hungry now :)

Wow, my mouth is watering!
OK I'm thinking a lite dish AFTER a palate cleanser, such as a fruit sorbet..peach comes to mind.
I would go with a chicken fish or maybe a steak, if the side dish is really light.
If you go with Chicken or fish you can round it out with a decadent dense dessert!
Chocolate chocolate chocolate!
