Boneless Leg Of Lamb With Roasted Garlic
Buy a 5-7 pound boneless leg of lamb with the sirloin muscle removed.
Separate the leg into three pieces along natural lines of fat and connective tissue.
Trim meat extensively to remove fat, gristle, and silver skin, reserving meaty scraps for accompanying jus.
Brine the meat for 2 hours.
Prepare a roasted garlic/parsley paste and roasted garlic jus while the meat brines.
Apply paste to each piece of meat and tie into a small roast shape.
Just before cooking, sprinkle with kosher salt and freshly ground black pepper.
Cook at 350-400°F until 120°F for medium-rare, 125°F for medium, 130°F for medium-well, approximately 30-40 minutes.
Place cooking grate directly over hot coals. Sear roasts on all four sides, approximately 2 minutes per side.
Tent with foil and let rest for 15 minutes before slicing.
Serve with roasted garlic jus.

Well I've got two options I've done before and I've got 4 kids. These are basically stop and go in the prep so they work okay.
I assume you're buying the lamb all boned etc.
1)Just take about 1/4 cup of prepared pesto and spread it inside the lamb. Roll it back up and tie it. Spread the outside with a thin layer of ground mustard and then press it with bread crumbs seasoned with parmesan cheese. Roast it at 350 until you get it to the doneness you prefer. Serve with potato of choice and a crispy green salad.
2) Cube the lamb into 1 inch pieces and marinate it in 2 cups of plain yogurt mixed with 6-8 cloves of minced garlic, one finely chopped onion, 1 tsp salt, and 1/2 tsp of freshly ground black pepper. You can mix in a couple of Tbsp of a minced fresh herb such as oregano, rosemary, or mint if you like. Marinate for 2-6 hours and then thread on skewers and grill. Leave as much of the marinade on as you can because it makes a tasty sauce. A rice pilaf and cucumber/tomato salad would be good with this. This is killer and the kids will eat it too! Who doesn't like meat on a stick!

INGREDIENTS
4 cloves garlic, sliced
2 tablespoons fresh rosemary
salt to taste
ground black pepper to taste
5 pounds leg of lamb
DIRECTIONS
Cut slits in the top of the leg of lamb every 3-4 inches, deep enough to push slices of garlic down into the meat. Salt and pepper generously all over the top of lamb, place several sprigs of fresh rosemary under and on top of the lamb.
Roast at 325-350 degrees F (165-175 degrees C) until the lamb is cooked to medium well. Do not overcook the lamb, the flavor is best if meat is still slightly pink.

White bean and lamb stew.
Cut the lamb into 1 inch cubes
Brown the lamb in a fry pan
Add lamb, white beans (I used 2 cans), diced tomatoes and savory.
Cover with broth or water.
Cook for 3 hours.
