I am cooking Valentines day dinner and the recipe for risotto called for dry white wine. I would rather use something else than wine. Any suggestions?

if it's to avoid alcohol content..don't worry....the alcohol just burns off....you won't get drunk on it

Other than that try chicken broth

De-alcoholized wine is a good choice. If it's the alcohol you don't like. Chicken broth adds flavor but the wine adds acidity so maybe add a Tablespoon of apple cider vinegar to 1 cup of chicken broth and add whatever measure of wine was to be used from that mixture.

I would avoid using cooking wine. They load it up with salt, and remember, as you cook, the flavors concentrate, making the risotto way too salty. Chicken broth with a teaspoon or two of vinegar would do you just fine.

When you heat alcohol in a recipe it burns it off. So all that is left is the flavor. But one alternative could be unsweetened apple juice or even lemon juice if you need something very acidic. Just a tablespoon or two.
