Oven Fried Fish

Ingredients
1 lb fresh whitefish fillets

1/4 c all-purpose flour

1/4 ts salt

1/4 ts lemon pepper

1 egg white

1/4 c dry bread crumbs

1/4 c cornmeal

1 1/2 ts grated lemon peel

1/2 ts basil

Directions
Start by cutting the fish into small serving-size pieces then in a bowl combine the flour, salt and lemon pepper.
Take the egg white and beat it until frothy and set aside. In a seperate bowl combine the bread crumbs, cornmeal, lemon peel and basil all together. With each piece of fish dip it into the flour mixture, shaking off excess. Next dip the fillet into egg white and coat with bread crumbs.

Spray a shallow baking pan with nonstick cooking spray like Pam and place the fillets on it. Bake in a 450 degree oven for approximetly 6 - 12 minutes or until the fish flakes easily.

Depends on the type of fish. With a Steak of Salmon, I like to put it in baking paper, with some seasoning and some Fennel and a slice of orange, some lemon and a little wine. I guess this could be done with other fish, then it is placed in the oven, on 180 degrees Celsius for 15 - 20 minutes.

For something really easy and very tasty if the fish is filletted I would sugguest to fry it. Cut up in serving peices, then dip in egg, or milk (I like egg better), then cover with cracker cumbs (I use salted soda crackers). Fry out until fish is cooked with cooking spray and serve with a peice of lemon.
