The main point of the restaurant will be that 70% of the items sold will be pig of the spit roast. So ideally a name based around pork is what I am looking for although anything that would be catchy will be considered.

How about "THE WHOLE HOG" as in going the whole hog. I think it fits your concept pretty well.

You could even give the name to a mixed grill: Pork chop; sausage; black pudding; gammon; liver; (maybe Kidney?).

'The SPIT-ROAST Emporium' - steer away from coming up with a cuddly friendly character who is a pig - not good. Something old fashioned like Emporium is a good bet. PUNS ARE NOT FUNNY. Trust me....
