This is an awesome recipe (my Mom's)
Slice 3 cukes Peeled
add 4 tablespoons white vinegar
1 teaspoon kosher salt
1 teaspoon black pepper
1 teaspoon sugar or Splenda
1 teaspoon olive or peanut oil
mix together well and stor in refrigerator covered for at least 1 hour for the ingredients to meld together.
WARNING: this dish can be habit forming

another good way to serve them is to slice them into a bowl and pour Balsamic vinaigrette dressing on top. mix together and store in refrigerator for 1 hour before serving.

SALAD
cucumbers, peeled seeded and sliced
tomatoes, peeled seeded and sliced
green onions, sliced including green parts
minced garlic
chopped Italian parsley
olive oil
red balsamic vinegar
Your favorite dried herbs, like basil, oregano, marjoram, savory, rosemary

You can use different oils and vinegars and herbs to make the salad taste different.


STEAMED CUCUMBER

Steam cucumber until it's warm and starting to get soft. Remove from heat. Put plain yogurt on it. Sprinkle with dried snipped chives and dill weed.


Armenian cucumbers are best for cooking, but others will work too.

I'm a real cucumber fan myself and I like them just about any which way you can have them! I sometimes make a salad with sliced cukes, grape tomatoes and green onion dressed with a little white vinegar, salt and fresh ground pepper and a dash of olive oil. I also use them for "sandwiches" and thinly slice them the long way, top with garlic and herb cream cheese, or smoked salmon and cream cheese, then roll them up and secure with a toothpick. You can also slice them and top with goat cheese, and a pepper salami. For the vegetarian side of things, leave out the salami and put on sliced olives or a sprig of dill. Good stuff!

I never liked cucumbers until my boyfriend's mom brought over her "cucumber salad" & I'll be honest - it is wonderful!! Just slice cucumbers into circles & place in large bowl. Add 1 medium onion thinly sliced, then add white vinegar, sugar & mustard seed. Stir well & chill til ready to serve. This is actually better the second day, because it gives the flavors a chance to blend......Yummy!!

my mom makes some great cucumbers. She fills a large bowl with regular vinegar adds cucumber slices, salts and peppers it and then lets it sit for awhile.

then pull the slices out and eat them.

Doesnt sound so good but it really is.

Put salt on a skinned cucumber and eat it.


Also works with carrots but tastes like crap

same with apples

I have 2 ideas:
1. slice them up and just put plain normal bottled italian dressing on them let them sit for about 1 hour then enjoy
2. slice them up and cover them in sour cream and add salt and pepper to taste
they are both very simple ideas but they both work very well and taste real good hope you like them

slice unpeeled cucumbers and slice onions and toss together with ranch dressing , add shredded cheddar cheese and bacon bits. makes a good easy salad.
