There are actually 5 pillars of Islam, and they are the foundation of the religion (hence "pillars").
1. Shahadah - belief in the oneness of God (swt), and belief that Muhammad (saws) is His prophet.
2. Salat - prayer that we do 5 times a day
3. Sawm - fasting, both during the month of Ramadan and voluntary fasting that we can do throughout the year
4. Zakat - an annual charity donation of roughly 2% of your income to be given to the poor in the community
5. Hajj - this is the pilgrimmage that Muslims make to Mecca. We are commanded to do this once in our lifetime given that we have the means and ability to do so.
This is the short-story version cuz I know people don't like reading books when they're lookging for a quick answer, lol. So I hope this helps and if you need more information, don't hesitate to ask! Good luck!
Edit: Lol! Just read shocko's answer and feel a little dumb. Yes, the three pillars represent Abraham's struggle with Satan. He threw the first stone and he stopped bothering him, but then came back. Then Abraham threw a second stone and he left again and came back again. The third stone he left and never came back. When Muslims do this during the hajj, it's symbolizing casting Satan and his temptations out of our lives. There is a really really excellent documentary where you can watch three different people perform hajj and what they went through and what they learned from the journey. It's a little long, but I really recommend it. It is five parts so be sure to watch all, though I think once you get started you'll be too interested not to, lol! I sure was!

May the peace, blessings and mercy of God be upon you
I assume you are not talking about the 5 Pillars of Faith, rather like you said in your question the ones at Mina. Here is the proper information.
The Three Pillars
The 10th day of Dhul Hajjah begins before daybreak. The pilgrim moves on to the village of Mina. There are three white pillars at Mina representing "the Great Devil." On this third day of rituals , the pilgrim throws seven of the pebbles at the Jamrat-ul-Aqabah. The pillars at Mina, it should be added, mark the place where the Devil made three attempts at persuading Abraham to disobey God's command and not sacrifice his son, Isaac, and failed.
The Jamraat are located within a few hundred feet of one another in a line and are named as follows:
Jamrat ul Kubra
The last stone pillar in the line. This is also called Jamrat ul Uqabah.
Jamrat ul Oola
The first stone pillar in the line.
Jamrat ul Wusta
The second (middle) stone pillar in the line.
Peace Be With You

well, actually, there are 5 pillars, not three.
1. shahadah- the belief that god is one and mohammed is his messenger.
2. prayer- a muslim has to pray to god five times a day
3. ramadan- a muslim has fast during the month of ramadan
4. zakat- a muslim has to give charity
5. hajj- a muslim must make a hajj at least once in their lifetime
hajj goes ten days forward every year, this is it was i believe....december 19-22 i think, im not sure. throwing the pebbles in mina is called jamarat.

Jamrat al-‘Aqabah.
Jamrat al-‘Aqabah is the first of the jamaraat to be stoned. It is stoned on the day of Eid after the sun has risen.
That's as much as I know.
Hope that helps.

it is all about the story of abraham mentioned in quran, when god ordered him to slay his son to test his faith, satan went to abraham to tempt him not to do what god ordered him,he throw him with the stone, and then satan repeated the same thing with the wife and the son and they did the same thing,so these three pillars indicate the three places where satan tried seducing abrahm, his wife and his son......the story is long this is just a brief....you will find it on the web i am sure........
