I have a recipe for fettucine alfredo that calls for:
8 onces uncooked pasta, but i have a box of 12 onces.
The rest of the ingrendients are
1/2 cup butter
1/2 whipping cream
3/4 cup grated Parmesian cheese
1/2 teaspoon salt

What are the ajustments i have to make for the12 once of fettucine i have?

multiple everything else by 3/2

3/4 butter
3/4 cream
1 1/8 cheese
3/4 salt

Use 3/4 cup butter; 3/4 cup cream; 1 1/8 cup cheese. I think the salt amount is fine.

Also, throw in an egg yolk or two to the hot pasta (stir quickly or temper) before adding the cold ingredients to bind everything together. Makes the sauce much creamier and rich.

You really don't need to make an adjustment,just cook the pasta to package directions,when it's done take out 1/3 of the cooked pasta and what you have left will be perfect for the Alfredo!
